Cornwall and Devon are famous for their delicious scones however, they have an ongoing debate about whether the clotted cream or the jam goes on first.
Regardless of your thoughts on which goes first, you must agree that scones, in particular homemade scones, are absolutely delicious!
Decidedly British. The Scone with clotted cream and jam.
I make these all the time at my cafe. Customers love them.
Here's the recipe if you'd like to give them a try.....
350g Self Raising Flour
1 1/2 tsp baking powder
75g soft margarine
100g caster sugar (You can use less if you're trying to be healthy)
100ml milk
2 large eggs
Method....
Preheat the oven to 200 C
I find it easier to weigh out all the ingredients in advance. Keep a little extra flour to one side as you'll need to flour the bowl later.
Add the flour, baking powder and margarine to a mixing bowl and rub together to form a bread crumb consistency.
Add the sugar and rub this in well to ensure it's evenly distributed throughout the mixture.
Crack the eggs into the milk and mix well.
Form a well in the bottom of the bowl and pour in the egg and milk mixture a little at a time, mixing with a fork as you pour. (keep about 15ml of the mixture back to glaze the top of the scones)
Use your hands to form a dough. If the dough is a little too wet, add flour.
To form the scones you can roll out the mixture on a well floured surface and cut out the scones using a round cutter. I prefer to get my hands in. (Wearing gloves of course) I divide the mixture into six portions and form a rough ball shape from each one. I place the balls onto a baking tray (covered with baking parchment).
Place in the oven for about 20 minutes.
When you take them out of the oven allow them to cool for a moment or two.
Serve with delicious clotted cream and strawberry jam. For an extra treat add a few fresh strawberries too!
